Last Tuesday, Joan Nathan’s King Solomon’s Table was released. It’s her eighth cookbook, a living historical document with 170 dishes from the Jewish diaspora, ranging from India’s Bene Israel fish curry to Libya’s spicy Arctic char cooked in tomato sauce, or Ahareimi.
Nathan has been conducting archive work like King Solomon’s Table for decades. Nathan, now 74, was once a protégé of Judith Jones of Knopf and the host of her own PBS show. He has long been regarded as a recorder (and preserver) of Jewish history through cuisine. She’s been to France in search of Jewish residents’ quiches, kugels, and couscous; she’s studied Israel’s complicated foodways, both past and contemporary; and she’s created recipes for children celebrating Jewish festivals.
Since she began producing cookbooks in 1975, Nathan has collected and produced a large number of recipes. These are only a few examples. Allow these recipes to tide you over until you can visit King Solomon’s Table.
