We’re still at least an hour away from Hampi in the south Indian state of Tamil Nadu. The moon will still be up for at least that long. At Dudu Falafel, it could be midnight. In the main window, an Israeli tourist is singing the lyrics of an Israeli pop song as it blasts from the speakers. People who pass by can hear the song. At Dudu Falafel, the owner, Chandru Singh, is in charge of making falafel and shakshuka for Israeli backpackers and other tourists from around the world. Dudu is one of several restaurants in the area that serve Israeli comfort food. It stands out from the rest because it imports its zaatar, paprika, and even the instant coffee that many Israelis can’t live without.
