Babu Ji, a popular modern Indian cafe named after “what we New Yorkers may call the mayor of the block,” is a must-visit for fans of all things chili and spice. If you’re talking about the mayor of a New York City block, you can bet he’ll require an egg and cheese bagel sandwich to match. Owners Jessi and Jennifer Singh collaborated with East Village breakfast spot Black Seed Bagels (the inventor of the pizza bagel) to develop this mix of Indian street food and a New York classic that debuted this week on their menu. It’s incredible: a toasted bagel with burnt garlic and fennel seeds, spiced vegetable scrambled eggs, and raita-themed cream cheese that melts like its yogurt-based namesake inside a toasty cocoon.
